Ceviche Acapulco

Ingredients:
Sawfish fillets (1lb.)
Enough lemon juice to marinate
2 large tomatoes
1 medium onion, finely chopped
3 tbsp. chopped coriander
3 tbsp. olive oil
2 avocados
Dried crumbled oregano
Chopped chili
4 large olives
Salt

Directions:
Chop the sawfish fillets in cubes and then soak them in lemon juice. Refrigerate for several hours and let the fish marinate.

After refrigerating, drain the lemon juice with a strainer. Next, mix the fish with tomatoes (make sure they are peeled, chopped, and seedless), cilantro, chopped chili, onion, oil, salt, and a hint of lemon.  

Place contents on a glass or ceramic plate (do not use aluminum as it taints the flavor of the fish) and refrigerate. Before serving, add peeled and diced avocados, and oregano.
Serve in a glass cup, and decorate with an olive.
