Creamy Scalloped Potatoes And Ham Supper

This traditional one-dish entrée is great made with ham or turkey. Substitute sliced hot dogs for a kid-pleasing casserole.

Ingredients:
  • 2 cups water
  • 1 (4.9-oz.) pkg. Hungry Jack® Sour Cream and Chives Potatoes
  • 2/3 cup milk
  • 2 cups cubed cooked ham or smoked turkey
  • 2 cups frozen mixed vegetables, thawed
  • 1 teaspoon prepared mustard
  • Preparation Directions:
    1. Combine potatoes, sauce mix, water and milk in 3-quart saucepan. Heat just to boiling stirring occasionally, reduce heat and cover. Simmer for 10 minutes, stirring occasionally.

    2. Stir in ham, mixed vegetables and mustard and continue to cook for 4 to 6 minutes or until mixture is thouroughly heated, potatoes are tender and sauce has thickened.

    4 (1 1/4-cup) servings
