Italian Chicken and Bacon Salad Serves 4 Prep time: 5 minutes Cooking time: 10 minutes |  | | | Serve with crusty bread for a tasty main-meal salad. You can use any variety of lettuce that is available - wash and dry the leaves carefully and then the warm dressing will coat everything evenly. 2 OXO Herbs and Spices Italian Cubes 3 boneless, skinless chicken breasts, cut into thin strips 5 rashers lean back bacon, thinly sliced 4 tomatoes, cut into wedges ½ cucumber, diced 1 bunch spring onions, trimmed and chopped large bag of prepared salad leaves 60ml/4 tbsp olive oil 15ml/1 tbsp red wine vinegar | - Put the chicken into a dish and crumble over the two OXO Herbs and Spices Italian Cubes. Toss everything together so the chicken is coated with the mixture.
- Put the salad leaves into a large serving bowl, add the tomatoes, cucumber and spring onions.
- Heat half of the oil in a large frying pan, add the chicken and bacon and cook for 8 minutes, stirring, until the chicken is lightly golden brown.
- Lift the chicken from the pan and add to the salad.
- Put the remaining oil into the pan and add the vinegar. Swirl around and mix with the pan juices. Then pour over the salad and toss together. Serve immediately.
