Spicy Bean and Pepper Burritos Serves 4 Prep time: 5 minutes Cooking time: 15 minutes |  | | | 1 or 2 OXO Herbs and Spices Mexican Cubes 1 pkt 8 flour tortillas 1 tbsp vegetable oil 1 medium onion, sliced 2 cloves garlic, crushed 3 peppers, red, green and yellow , seeded and chopped 420g can baked beans 420g can red kidney beans, drained To serve: 2 tomatoes, chopped 150g pot plain yogurt or créme fraiche | - If warming the tortillas in the oven, heat to 180C/350F/gas 4 Unwrap the tortillas, wrap in foil then place on a baking sheet and place in the pre-heated oven for 15 minutes. Alternatively the tortillas can be warmed individually on a griddle pan just before serving after making the filling.
- Heat the oil in a large frying pan, add the onion, garlic and pepper and cook together for about 5 minutes until beginning to soften. Crumble in one or two Mexican cubes (depending on taste) and stir over the heat for 1 minute.
- Stir in the baked beans and red kidney beans and cook gently for 3-4minutes.
- To serve : divide the filling between the tortillas , add some chopped tomatoes and dollop of yogurt, then roll the tortilla around the filling. Or fold up one end over the filling, then fold over the two sides to make an envelope shape called a burrito This is a great meal for everyone to help themselves at the table adding the toppings as wished and assembling their own burritos. Try adding grated cheese or diced avocado for a change
