ESSENTIAL FOIE GRAS FACTS

 Whole Foie Gras :

Made of one or several molded lobes, it is the noble high-grade highest quality product. With its exquisitely fine taste and texture, it is the Foie Gras most appreciated by Gourmands.

 Block of Foie Gras :

Made of 95-98% Foie Gras, it is a reconstructed Foie Gras which may contain morsels of Foie Gras that became separated once it was cleaned or cut. Hence it is identified as Block of Foie Gras with morsels. Such name can only be used when blocks contain 50% morsels for each block of goose foie gras, and 30% for each block of duck foie gras. If it does not reveal any morsel once cut, it is still a product made of 98% foie gras, mousse-like and soft. It is then also identified as Block of Foie Gras.

 Mousse of Foie Gras :

Made of at least 50% foie gras mixed with apoultry liver, it is a very fine specialty, perfect for culinary preparations based on foie gras. Mousse of Foie Gras will be the delight of your guests at the time of the aperitif, and is perfectly suitable for the making different dishes where Foie Gras is used as a second ingredient.
