| FRESH SEVRUGA CAVIAR The "smallest" Caviar producing Sturgeon in the Caspian Sea is Sevruga (up to 250 lb.) It is also the "fastest" - to produce it's first Caviar, Sevruga needs to mature for 5-7 years. The Sevruga Caviar eggs are smaller than those of Osetra and have a unique clean salty-sea flavor. Sevruga is the most widely known Caviar because of it's universal use in a variety of Gourmet combinations. Sevruga can be enjoyed much the same way as Beluga and Osetra, but also in the more traditional Russian Way. Short recipe includes: a shot of chilled triple distilled Vodka e.g. Belvedere, Chopin, Grey Goose, Stoli Crystal or Absolute and partially scooped young Baby Potato Halves with Crème Fraiche and usual Caviar Garnish (finely chopped shallots, capers, green onions, egg whites and yolk).
