Thai Chicken with Grilled Peach-Chili Chutney


Tender chicken and grilled peaches mixed with a hint of sweet chili sauce make this a can't miss summer dish!

Ingredients


(Makes 4 servings)

  • 4 teaspoons extra virgin olive oil
  • 1 1/2 teaspoons granulated sugar
  • 1 teaspoon salt
  • 1 teaspoon cornstarch
  • 1 teaspoon garlic powder
  • 1 teaspoon curry powder
  • 1/4 teaspoon ground cumin
  • 4 (about 1 1/4 lb. total) boneless, skinless chicken breast halves
  • 2 medium peaches or nectarines, washed, cut in half and pits removed
  • 2 1/2 tablespoons MAGGI TASTE OF ASIA Sweet Chili Sauce or Chili Garlic Sauce
  • 2 tablespoons finely chopped red onion




Directions


COMBINE oil, sugar, salt, cornstarch, garlic powder, curry powder and cumin in medium bowl; stir well to form a paste. Add chicken and rub to coat. Cover; refrigerate for 30 minutes or overnight.

OIL grill and preheat to high.

GRILL chicken and peaches, turning occasionally, until chicken is no longer pink in center, about 10 minutes, and peaches are tender, about 5 minutes.

LET peaches cool and chop into 1/2 inch dices. Place in small bowl and stir in sweet chili sauce and onion. Serve over chicken.
